Two points worth being plain about. First, data: customer correspondence is personal data, the Data Protection Commission is the supervisory authority here, and "our vendor said it's fine" has never been a defence. We put the processing agreement, the retention period and the EU processing location in writing before anything connects to your mailbox. Second, judgement: the AI drafts, it does not decide. Anything with legal or financial consequence — a solicitor's letter, a payment change request, a formal complaint — is handed to a person, deliberately.
